Is there a way to set up a task template where we can set items to be completed in the future. IE
task one due today
task two due 7 days from start of project etc etc?

I wish this functionality was in Project templates, but I haven’t found a way to do it in them. The “due date” field in a card/task on a project template is useless without some way to set a relative date.
There is a way to accomplish this in Workflow Automations, using the DATEADD() formula. Here’s a screenshot for how I set one of them up:
