Our company recently switched from Gmail to Outlook. If we were to use Zapier, is it still possible for us to sync outgoing and incoming emails with People. We do not need to know when they opened the emails. Just having them under activities for a Person would be very helpful.

Oh gosh... Not using Gmail and using Copper is a recipe for disaster.
I suppose you could build an integration to just log Outlook (Microsoft 365) emails as activities within Copper, but that would be quite costly if using something like Zapier (plus you'd have to authenticate everyone's Outlook within Zapier, which would also boot you out if anyone changed their password).
Let's say it's possible, just incredibly painful, and might not exactly accomplish what you're hoping it would.
How large is your team? (Number of Copper seats)?
