How can I schedule bulk emails to send later (at a specific time/date)? I’ve tried doing it through Copper and through Gmail but neither seems to work.

In Gmail, you can schedule emails one-by-one but not in bulk. I’ll put a screenshot below.
If you are on Business Tier, you could use Marketing Tools to achieve a similar result. Basically, you would build an email sequence with a delay that matches up to when you want the email to be sent. Then, you would queue up the recipients and wait.
