It appears that the opportunity cards turn red when there is no associated activity after 30 days. How can I set that to a different period...like 90 days?

You are correct! The opportunity card will turn red when there is no associated activity on this opportunity for the last 30 days.
To change the default 30 days to a different number please hover over an eye icon in the upper right hand corner of your screen in the Pipeline section, and change number 30 to the desired number of days:
