Is there any way to filter off a date field by “Last 30 Days” or something similar? The default options of Last Month or Last Week don’t quite work for this. Nor do exact date ranges.
If this ability does not exist, is there a workaround? I would also request that it be added to the default filtering options!

If that’s the case then we don’t have a way to adjust it to become “Last X days.”
I think the best thing to do is to get this feedback in front of the product team. If you don’t mind, I can turn this Question thread into an Idea? That way the product team will get notified. Let me know if that’s ok!
