Can a user be set up for access only (we are thinking of creating a team of users who can view Company records but not edit records) and still have the ability to create a task related to that company? Like set up a reminder to review their record yearly for updates?

You are able to customize settings for everyone on your team! Head on over to Settings->(Team)Visibility & Permissions->Create New Team->Save. Once you have created this team, you can head on over to Visibility & Permissions of that team and set your custom edits. This guide here is a great resource on these permissions.

Every user can have their own tasks linked to their calendar as long as they have synced Copper to their Google Calendar. Each user can make these private as well. Here is another guide on how to set up this sync.
